How I Eat Carbs Without Spiking My Blood Sugar

A realistic, science-backed look at carbs, fiber, cortisol, and why blood sugar stability doesn’t require fearing food.

In this episode, I’m breaking down why carbohydrates are not the enemy, even though they’ve been framed that way for decades. I unpack how carbs got such a bad reputation, why cutting them can feel “good” at first, and how to approach this macro in a way that supports your blood sugar and energy (without obsessive tracking or food fear).

One of my favorite post-training meals! High-fiber, whole-grain bread, cottage cheese, eggs, and spinach fried in ghee, and saurkraut.

Hi friends, and welcome back to Daily Deposits. If we haven’t met yet, I’m Edie. I’m a nutrition consultant (going on 10 years!), a mom of two, and a big believer in cutting through wellness noise in favor of what actually supports your body. Because let’s be honest… nutrition has become very conflicting and weirdly stressful.

And today’s topic sits right at the center of that chaos: carbs.

Carbs have become one of the most feared (and honestly misunderstood) parts of modern nutrition. I’ve felt personally victimized by the fear-mongering around carbs, and it’s something I hear constantly from my health coaching clients.

Somewhere along the way, carbohydrates went from being a basic energy source to something women feel like they have to “manage” or “limit” (two things I hear all the time as a health coach).
